When it comes to exciting new ways to eat salad, Green Goddess dressing doesn’t normally top the list. It’s about as dated as Caesar, and just as full as anchovies, too. But it’s also full of fresh spring herbs, which is why we’re happy to report that it’s making a comeback.

Green Goddess dressing had its start in San Francisco all the way back in the 1920s, and it was a staple California salad topping through the ’70s and ’80s. Then, it started to fade into the background. This might be because health conscious salad eaters didn’t want to top their greens with a dressing made of mayonnaise AND sour cream. We get it. But this dressing also happens to be absolutely delicious — and good for so much more than salads.

Give Green Goddess dressing another chance — in your sandwiches, on your pasta, and yes, even on top of salads.
